Dense Bean Salad

I try to always have something easy to snack on in the fridge, I’m not fully committed to meal prepping, because i enjoy the start to finish of cooking every night. But during the day when I can break away from my desk, I’m not going to take the time to cook a meal.

So you can pretty much guarantee to find a dense bean salad in our fridge. With a base of any combination of beans, and then all kinds of other fun additions. I’ve done Italian themed, fajita inspired, and this week we did a take on cowboy caviar.

They are so easy to make, 20 minutes and you’ll have a healthy and tasty snack for the week!

Ingredients:

  • 1 can black beans

  • 1 can pinto beans

    • be sure to rinse your beans!

  • 1 cup chopped bell peppers - any color!

  • 1/2 a large red onion, chopped

  • 1 jalapeno - we removed 1/2 the seeds

  • 2 grated garlic cloves

  • For the dressing

    • 1/4 ish apple cider vinegar

    • juice of 2-3 lemons

    • big squeeze of honey

    • 1/4 cup olive oil

    • pinch of salt, cumin, black pepper

Let’s Go

  • Drain and rinse the beans and add to a big mixing bowl

  • Add all the dressing ingredients to the bowl. I just go full send in the bowl, I don't make the dressing separately

  • Mr. New Orleans is one of those people who can’t eat cilantro because it tastes like soap - but I would have loved some of that in here

  • We also add diced avocado when we serve it

  • We eat dense bean salad with tortilla chips, add some on top of chicken or fish, or use it to bulk up salads!

I also love the Italian chopped style of this salad where we used: garbanzo and navy beans, mini marinated mozzarella balls cut in 1/2, cherry tomatoes, chopped salami, and chopped pepperoncini
