Greek Chicken Bowl

This meal has made it’s way into our weekly rotation. It’s SO GOOD.

Greek inspired chicken bowls are super healthy, so flavorful, and easy to make.

Both of us are pretty good in the kitchen, if I do say so myself, and we both love to try new recipes, so for something to be on repeat in this little kitchen - you know it’s good.

Ingredients:

  • Chicken

    • 1 or 2 chicken breasts, butterflied

      • Marinate the chicken in lemon juice, white wine and Italian seasoning

  • Greek Salad

    • 2 small or one large cucumber - chopped

    • 1/4 of a large red onion

    • 3 tomatoes - chopped

      • I remove the seeds/membrane of the tomatoes to reduce the moisture

      • We used roma tomatoes -but use whatever you like!

    • 1/4 cup feta cheese

    • 1/2 kalamata olives - chopped

    • zest of 1 lemon

    • juice of 1-2 lemons

    • a couple tablespoons of red wine vinegar

    • 2 grated garlic cloves

    • a couple tablespoons of olive oil

    • a couple pinches seasoning blend

      • we used my italian blend

  • Yogurt Sauce

    • 1 cup plain greek yogurt

    • juice of 2-3 lemons

    • a couple pinches seasoning blend

    • 1 tablespoon garlic confit

      • you can also just used grated garlic

  • Cauliflower Rice

  • Sliced lemons for garnish

Let’s Go

  • Marinate the chicken in lemon juice, wine, and seasoning and set aside

  • Add all the salad ingredients to a bowl and set aside

  • Make the yogurt sauce by adding yogurt, lemon juice, garlic and seasoning and refrigerate

  • Gril the chicken for a few minutes on each side until cooked to 165 degrees. Butterflying the chicken will shorten the cooking time

  • Sauté the cauliflower rice and season with italian seasoning until soft

  • Sear the lemon slices in the grill pan for garnish

  • Build your bowl!

    • Add cauliflower rice to the bowl

    • Top with sliced chicken

    • Add cucumber salad to the bowl

    • Top the chicken with the yogurt sauce

    • Add the lemons to garnish

When I have them, I also add chopped pistachios!
